Gut healing coconut ginger meatball soup

As promised here is my favorite go to soup to keep on hand for those days that I don't have time to cook, don't know what to cook, or simply don't feel like cooking. I like to pre-make a pot of this soup on sunday so I have it on hand during the week.

The reason this is one of my favorites is not only because it tastes great and its super easy to make, it also has amazing gut healing qualities and is light but satiating. There are also so many variations you can make of this. I've made it with ground turkey and brown rice,  ground turkey and sweet potato, chicken,, fish, or shrimp. Whatever variation I make I always add in avocado when I serve it along with fresh chopped cilantro and green onion.

Health Benefits:

  • Coconut milk and avocado are a great source of healing essential good fats helping balance hormones and assist in gut repair, cleansing, and immunity.
  • Bone broth is packed with minerals, amino acids, and collagen for healing and repair.
  • Parsley and Cilantro are great cleansing herbs.
  • Ginger and turmeric are great anti-inflammatory as well as immune boosting spices.
  • Garlic is a great immune booster and pathogen fighter with strong antibacterial, anti-viral, anti-parasitic, and anti-fungal properties.

This soup is so versatile it can be adapted to any specialty diet such as gaps, paleo, auto-immune paleo, SCD, etc.....

For this version I decided to make ground turkey meatballs as my protein source but I've had it without any added animal protein and loved it just as much for a lighter creamy simple soup.

Coconut Ginger Soup:

  • 24 ounces Chicken Bone Broth (homemade or remade like the one I used from "theflavorchef")
  • 1 BPA free can of full fat coconut milk
  • 1-2 inch piece of ginger grated ( I like more for stronger flavor)
  • 2 cloves of garlic chopped
  • 1 TBSP fresh lemon juice
  • 1-2 tsp red pepper flakes (more if you like it spicy)
  • 1-2 tsp Cumin
  • Salt and pepper to taste
  • 2 green onions chopped
  • 2 tsp turmeric

Put everything in pot and let simmer for about 20 minutes until flavors blend. Make meatballs and add to pot and simmer for another 15-20 min. spoon into bowls and top with sliced avocado, chopped cilantro, and green onion

Turkey Meatballs:

  • 1 lb 15% fat ground turkey
  • 4 chopped garlic cloves
  • 1/4 cup chopped parsley
  • 2 TBSP chopped cilantro
  • Generous pinch of sea salt sea salt and pepper (if ok with nightshades)

Mix all ingredients in a bowl and form into small balls. Lay on a parchment covered cookie sheet and bake at 350 degrees until golden brown. Add to the soup pot and continue to simmer in soup for about 20 minutes. You can make meatballs ahead of time and refrigerate but make sure that they are fully cooked at 170 degrees on a food thermometer and cool completely before storing in fridge or freezer.
